Menu Plan Monday ~ March 21st 2011


We stuck to our meal plan and tried some new recipes last week.  The chicken stroganoff was the winner for the March Madness Crockpot Bracket.  I loved the beef and pesto but I must admit that I was feeling very guilty with each bite I took knowing it wasn't the best food choice for me.

We had another guilty pleasure dessert last week on St Patrick's Day.  I found a recipe for Brownie Covered Oreos.  I decided to try these with Mint Oreos and I also substituted applesauce for the oil and used egg whites rather than eggs.  This made them a tad bit healthier (if not, then at least I felt better while eating them).

Here is our menu plan for this week.  One note, I always substitute ingredients for the fat free versions if they are available:

Monday - Easy and Delicious Chicken

TuesdayApple Butter Pork Chops - New recipe for us

Wednesday - Slow Cooker Creamy Tortilla Soup

Thursday - Crock Pot Beef Stroganoff

Friday - Leftovers

I'm attempting to make homemade english muffins as I'm typing this post.  The dough is rising now and I have to say I'm pretty excited to see how they turn out.  My intent is to make  Make Ahead Muffin Melts.  I'll let you know they turn out next week.

and how did the english muffins turn out? i think you need to go easy on yourself. pesto is not bad for you. what's in it? basil, pine nuts, olive oil (garlic?). maybe high in calories and GOOD fat but, it's not unhealthy by any means. you just have to eat less of something else to save room for those calories!
